So today is another snow day in Michigan! And my little pumpkin asked for pancakes instead of an omelet. What wouldn’t you do for your little picky eater? That’s right! Make a dairy-free breakfast.

These easy pancakes are extra fluffy and made from scratch. And I’m so excited to share my new recipe with you guys! I tweaked several recipes online and made my perfect one! I can promise you that these babies will turn out super fluffy thanks to the addition of baking powder + baking soda. And if you have lactose intolerance these pancakes are perfect!

I always try to make dairy-free recipes since I have eczema I notice that eliminating dairy helps a lot!

Ingredients:

  • 1 Egg (organic)
  • 3 Tbsp sugar
  • 3/4 cup coconut milk (organic) or any dairy-free milk of your choice
  • 1 tsp vanilla extract
  • pinch of salt
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1 cup all-purpose flour
  • 1 Tbsp Peanut Butter Powder Chocolate flavor (organic), I use by PB&Me, if you don’t like chocolate flavor for any reason they have original and no sugar added options.

 


A very important part of this recipe is to make sure the better is mixed very well. It should be smooth with no clumps.

Also, I used the waffle griddle, which is amazing! It helps with the fluffiness as well, it works so much better than a regular skillet.

Using waffle griddle I pour 1 Tbsp of batter for each pancake, but if you use a regular one, and like the bigger size of pancakes I would recommend 1/2 cup of batter. So instead of 10 little, you will have about 5 regular size pancakes.

Ingredients

  • 1 egg organic
  • 3 Tbsp sugar
  • 3/4 cup coconut milk organic
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1 cup all purpose flour
  • 1 Tbsp Peanut Butter Powder Chocolate flavour organic

Instructions

  • In a medium bowl add salt, baking soda, baking powder, all-purpose flour, and peanut butter powder. Set aside.
  • In the mixing bowl whisk together first 4 ingredients. 
  • Now mix together wet and dry ingredients. 
  • Slightly oil your skillet and place it on the stove over meadium-low heat. 
  • Pour 1 Tbsp of a batter, smooth out the top and cook it 2 mins on each side until the pancakes are golden brown.
